It may be faster if you move those transformed parameters into the model block, as mentioned here recently:
I’m wondering if the sum to zero constraints are brought over from JAGS, I haven’t seen them used in this way before in Stan. Unless I just need to be enlightened on what you’re doing there, you can try commenting those lines out and see what happens.
