RE DG: Personally, I have loved any lecture by Frederic Schuller, who covers among other things DG (available on youtube). But that’s even at double speed an investment of several hours only for listening, so that may not be what you are looking for.

For well-known non-Euclidean spaces, in particular spheres, torii, and Stiefel manifolds, there are well-known embeddings into higher-dimensional Euclidean spaces but I’m not aware of any references that collect them all together. Moreover many of the references for individual spaces don’t work out explicit constructions for lifted measures on the Euclidean spaces that project to uniform measures on the non-Euclidean spaces.
